Recently I was attending an impromptu dinner party and said I would bring dessert.  So having a mad flick through the recipe book and looking what I had in, I settled on my Nan’s Marshmallow Pie.

I had never mad this before but had copied it out of her old recipe book.  Here is the end result:

Marshmellow pie recipe


6oz sweet biscuits crumbled
3oz melted butter
2 tsp brown sugar

40z mashmallows
4 fl oz milk
4 fl oz whipped cream
2 stiffly beaten egg whites
1 tsp vanilla essence

Crush the crumbs and add melted butter and brown sugar.

Mix together and press into pie dish, cook for about 15 mins and leave to cool.

Melt the marshmallows and milk until creamy and then add the vanilla essence.

Once cooled add the whipped cream and stiff egg whites and fold together.

Spread on top of biscuit crust and leave for 3 hours to set.

Can be decorated with chocolate, I used Oreo cream.
